• Jorge Chanis started 4 years ago with a personal blog called "El Buen Diente", where he shared his thoughts on the restaurants he visited
• Then he created "El Buen Tenedor", which is a contest of the best Chefs and best restaurants in Panama City 
• He did this because he thought there was no aknowledge for the Panamanian Chefs, and they need to be motivated
• He got inspired in "The 50 Best", "San Pellegrino", and "Michelin" worldwide contests

• It took Chanis one year and a half to create this contest 
• There are 14 categories  that are evaluated by a special group of proffesional people, after that, they are evaluated by the public 
• Chanis explains that the quality is always important, the consistency and the good service
